Local cuisine pairing: Migas aragonesas
The pairing of this Macabeo with food from the same geographic area helps ensure complementary flavors. In this case we want to put value on the tradition of leftovers and making use of everything in the kitchen. The crumbs are dried bread that is fried with olive oil; therefore it has a component of fat. The citrus part of the wine will help clean this fat from our palates. It is a single varietal wine, with a crispy or crunchy fruit like the breadcrumbs. The dish can be complemented in many ways. Normally, some grapes are added (which in our case could be of grape macabeo).
In addition, adding 1 more ingredient such as ham or Aragonese sausage and therefore protein, then it can be better enjoyed with our garnacha red wine.
International cuisine pairing: Wok calamari with vegetables
This is a complementary and congruent wine pairing, as the wine and the dish share some similar nuances. Since we harvest the Macabeo early, it has some vegetal characteristics, which pair well with the crunchy vegetables cooked in the wok, at high temperature for a short cooking period. On the other hand, the wine has a salty touch, which pairs with the calamari.
