Serving advice
Just because I said you don't have to stress out about opening one of these bad boys too soon doesn't mean you should put them away and forget about it. Once you've got your cellar stocked you can feel free to open one up for any occasion anytime. How liberating! Give it about 45 minutes to open up after taking out the cork and pour that first glass. Good luck with that! I can't even follow my own advice.
Food match
This wine is a big boy, so I say "go big or go home" which means it needs a big-time dinner presentation. That's when we prepare the 3-finger steak. Just tell the butcher that. If they don't know what you mean, find another butcher. Slow roast this bad boy over indirect flame 'till it reaches about 115 degrees then pull it off the fire to relax. While its relaxing slather some herb infused melted butter all over it. After about 15 minutes put it back on the grill over the flames to finish. Keep turning it over until it reaches your doneness. This technique is called reverse sear and all the work is really worth it.
