Dont need to be aged to long, 3-4 years are great, this variety has high pH.

Yes!, it is good to open with time 40 to 60 minutes in advance or decant it, it will open and show all its great complexity

Meats in general; in Chile we have "asados"(BBQ),empanadas. I love at home with any type of stew
It goes very well with asiatic food too, it is flexible for food pairing!
