I think that the 2021 Francophone Cabernet Sauvignon will develop well in the cellar given proper cellaring conditions.
Serving advice
For the first year after release I would decant this wine before serving. After that period, if you have had the discipline to save a few bottles, I would let the wine warm up a bit from cellar temperature and serve it directly from the bottle
Food match
I would pair the 2021 Francophone Cabernet Sauvignon with grilled line caught fresh salmon served on a bed of basmati rice and steamed spinach. Otherwise, I would roast a Rocky chicken in a 450°F oven with baby potatoes and serve it with a caesar salad.
