The Felstar Brewery is sited in an Old Bonded Store of the Felsted Vineyard, the oldest commercial vineyard in East Anglia. It was started at the beginning of 2001 by two Italian brothers : Marcello Davanzo, known as Franco and Giuseppe Davanzo, known as Paolo. The range of Ales available today is extraordinary, from bitter to mild, from wheat beer to porter, from stout to proper lager. The Felstar Brewery is dedicated to brew a large variety of Ales and also is endeavoring to re-invent the “Real Lager” just as Camra did with Real Ales. It is almost impossible to find a properly brewed lager, one without the pasteurization, without additives or without added carbon dioxide, it is very easy, however, to find one without any flavour. Proper Lager is, literally, live and kicking, live because it has not been killed by the addition of chemicals or with flash pasteurization, kicking because the taste has returned in a big way. Best malted barley, best cone hops, good strain of bottom fermenting yeast, a 3 months long cold fermentation, controlled conditioning, the whole process done by brewers and not by chemists are the “secret” ingredients of a proper Lager.
